One-Pot Mediterranean Chickpea Orzo
Tender orzo, chickpeas, zucchini, tomatoes, spinach, lemon, herbs, and feta simmer together in one pot for a bright and satisfying vegetarian dinner. The pasta cooks directly in the seasoned broth, releasing starch that creates a silky sauce without heavy cream. Ingredients
- 2 tablespoons olive oil
- 1 small yellow onion, diced
- 1 medium zucchini, diced
- 4 garlic cloves, mincedSubstitute:
Garlic powder — Replace 4 garlic cloves with 1/2 teaspoon garlic powder. Add it with the oregano and basil.
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon crushed red pepper flakes
- 12 ounces dry orzoSubstitute:
Ditalini pasta — Replace 12 ounces orzo with 12 ounces ditalini. Depending on the pasta shape, up to 1/2 cup additional broth may be needed and the cooking time may increase by 2 to 3 minutes.
- 2 cans (15 ounces each) chickpeas, drained and rinsedSubstitute:
Cannellini beans — Replace the two 15-ounce cans of chickpeas with two 15-ounce cans of cannellini beans, drained and rinsed.
- 1 can (14.5 ounces) diced tomatoes, undrained
- 3 1/2 cups low-sodium vegetable broth
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 5 ounces baby spinachSubstitute:
Chopped kale — Replace 5 ounces baby spinach with 5 ounces finely chopped kale. Add the kale during the final 4 to 5 minutes of the orzo cooking time so it becomes tender.
- 4 ounces crumbled feta cheeseSubstitute:
Soft goat cheese — Replace 4 ounces feta cheese with 4 ounces soft goat cheese. The finished dish will be slightly creamier and less salty.
- 2 tablespoons fresh lemon juice
- 1 teaspoon finely grated lemon zest
- 1/4 cup chopped fresh parsley, optional

Heat the olive oil in a large Dutch oven or deep skillet over medium heat.
Add the onion and zucchini and cook for 5 to 6 minutes, stirring occasionally, until the onion is translucent and the zucchini begins to soften.
Add the garlic, oregano, basil, and crushed red pepper flakes. Cook for 30 seconds until fragrant.
Add the dry orzo and stir for 1 minute so the pasta becomes lightly coated with the seasoned oil.
Add the chickpeas, diced tomatoes with their juices, vegetable broth, salt, and black pepper.
Stir well and bring the mixture to a gentle boil.
Reduce the heat to medium-low and simmer uncovered for 10 to 13 minutes, stirring frequently, until the orzo is al dente and the liquid has thickened into a light sauce.
If the orzo absorbs the liquid before it becomes tender, add additional vegetable broth or water 1/4 cup at a time.
Reduce the heat to low and add the baby spinach in handfuls, stirring until wilted.
Remove the pan from the heat.
Stir in 3 ounces of the feta, lemon juice, and lemon zest.
Let the orzo stand for 3 to 5 minutes. It will continue to thicken as it rests.
Taste and adjust the salt, pepper, or lemon juice if necessary.
Top with the remaining 1 ounce feta and fresh parsley if desired.
Serve warm.
Recipe Notes
- Stir the orzo frequently while it cooks because the starch released from the pasta can cause it to stick to the bottom.
- The finished dish should be creamy and loose when it comes off the heat. It thickens considerably as it stands.
- Rinsing canned chickpeas removes excess sodium and packing liquid.
- Add the spinach only after the orzo is cooked so it stays green and tender.
- Feta varies in saltiness, so taste before adding additional salt at the end.
- For meal prep, divide cooled portions among airtight containers and refrigerate for up to 4 days.
- When reheating, stir in 1 or 2 tablespoons of broth or water per serving to loosen the pasta.
- This recipe can be frozen, but orzo becomes softer after thawing, so refrigeration is recommended for the best texture.
