Ingredients
- 1 1/2 lb boneless skinless chicken breasts, cut into bite-size pieces
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1 small yellow onion, finely diced
- 4 cloves garlic, minced
- 1 cup dry orzo pasta
- 2 1/2 cups low-sodium chicken broth
- 1 tsp finely grated lemon zest
- 2 tbsp fresh lemon juice
- 3 cups baby spinach
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp chopped fresh parsley
- 1 tbsp unsalted butter
- Additional lemon wedges, for serving

Pat the chicken pieces dry with paper towels.
Season the chicken evenly with Italian seasoning, garlic powder, salt, and black pepper.
Heat the olive oil in a large deep skillet or Dutch oven over medium-high heat.
Add the chicken in a single layer and cook for 5 to 7 minutes, stirring occasionally, until lightly browned and cooked through to an internal temperature of 165°F.
Transfer the cooked chicken to a clean plate and set aside.
Reduce the heat to medium and add the diced onion to the same pot.
Cook for 2 to 3 minutes, stirring occasionally, until the onion begins to soften.
Add the minced garlic and cook for about 30 seconds, stirring constantly.
Add the dry orzo and stir for about 1 minute to lightly toast the pasta.
Pour in the chicken broth and stir well, scraping any flavorful browned bits from the bottom of the pot.
Bring the mixture to a gentle simmer.
Reduce the heat to medium-low and cook uncovered for 8 to 10 minutes, stirring frequently so the orzo does not stick to the bottom.
When the orzo is tender and most of the broth has been absorbed, reduce the heat to low.
Stir in the lemon zest, lemon juice, baby spinach, Parmesan cheese, and butter.
Continue stirring until the spinach wilts and the Parmesan melts into the orzo.
Return the cooked chicken and any accumulated juices to the pot.
Stir gently and cook for another 1 to 2 minutes, until everything is heated through.
Taste and adjust the seasoning or lemon juice as desired.
Garnish with fresh parsley and serve with lemon wedges.
Recipe Notes
Orzo continues absorbing liquid as it sits. If the dish becomes thicker than you prefer, stir in a splash of warm chicken broth before serving. Freshly grated Parmesan melts more smoothly than pre-shredded cheese. For meal prep, refrigerate portions in airtight containers for up to 4 days and add a splash of broth before reheating.
