One-Pot Creamy Cajun Shrimp Pasta

Ingredients

  • 1 pound large raw shrimp, peeled and deveined
    Substitute:

    Sea scallops — Replace 1 pound shrimp with 1 pound dry-packed sea scallops. Pat them very dry and sear for approximately 2 minutes per side, depending on thickness, until opaque and cooked through.

  • 2 teaspoons Cajun seasoning, divided
  • 1 tablespoon olive oil
  • 1 medium red bell pepper, diced
  • 3 garlic cloves, minced
  • 3 cups low-sodium chicken broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 12 ounces penne pasta
    Substitute:

    Rigatoni — Replace 12 ounces penne with 12 ounces rigatoni. Rigatoni may require approximately 2 additional minutes of simmering and up to 1/4 cup additional broth.

  • 1/2 cup heavy cream
    Substitute:

    Half-and-half — Replace 1/2 cup heavy cream with 1/2 cup half-and-half. Keep the heat low after adding it because the sauce will be slightly thinner and more prone to separating.

  • 3/4 cup finely grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley, optional

Instructions

  1. Pat the shrimp dry with paper towels and season them with 1 teaspoon of the Cajun seasoning.

  2. Heat the olive oil in a large deep skillet or Dutch oven over medium-high heat.

  3. Add the shrimp in a single layer and cook for 1 to 2 minutes per side, just until opaque and lightly browned. Transfer the shrimp to a clean plate. They will finish warming in the pasta later.

  4. Reduce the heat to medium. Add the diced bell pepper and cook for 3 to 4 minutes, stirring occasionally, until it begins to soften.

  5. Add the garlic and remaining 1 teaspoon Cajun seasoning. Cook for 30 seconds, just until fragrant.

  6. Pour in the chicken broth and diced tomatoes with their juices. Stir well and scrape any browned bits from the bottom of the pan.

  7. Add the penne and stir so most of the pasta is submerged in the liquid.

  8. Bring the mixture to a gentle boil, then reduce the heat to maintain a steady simmer.

  9. Cook uncovered for 12 to 15 minutes, stirring every 2 to 3 minutes so the pasta does not stick. Continue cooking until the pasta is al dente and most of the liquid has been absorbed. Add a small splash of broth or water if the pan becomes dry before the pasta is tender.

  10. Reduce the heat to low and stir in the heavy cream and Parmesan.

  11. Cook for 1 to 2 minutes, stirring gently, until the cheese melts and the sauce becomes creamy.

  12. Return the cooked shrimp and any accumulated juices to the pan. Stir gently and cook for 1 to 2 minutes, just until the shrimp are hot throughout.

  13. Stir in the lemon juice and black pepper.

  14. Taste before adding any additional salt because Cajun seasoning, broth, and Parmesan can all contribute significant salt.

  15. Remove from the heat and garnish with parsley if desired. Serve immediately.

Recipe Notes

  • Use raw shrimp rather than precooked shrimp for the best texture.
  • Shrimp cook very quickly. Removing them from the pan before cooking the pasta prevents them from becoming rubbery.
  • Different Cajun seasoning blends vary considerably in salt and heat, so taste the finished pasta before adding additional seasoning.
  • Stir the pasta frequently while it simmers because one-pot pasta releases starch directly into the sauce and can stick to the bottom.
  • The sauce will continue to thicken as the pasta stands. Add a tablespoon or two of warm broth when reheating if necessary.
  • Refrigerate cooled leftovers in an airtight container for up to 3 days.
