Ingredients

- 1 can (10.5 ounces) condensed cream of chicken soupSubstitute:
Condensed cream of mushroom soup — Use one 10.5-ounce can condensed cream of mushroom soup in place of the condensed cream of chicken soup.
- 1 cup low-sodium chicken brothSubstitute:
Low-sodium vegetable broth — Use 1 cup low-sodium vegetable broth in place of 1 cup low-sodium chicken broth.
- 1 packet (1 ounce) chicken gravy mixSubstitute:
Turkey gravy mix — Use one 1-ounce packet turkey gravy mix in place of the chicken gravy mix.
- 1/2 teaspoon dried thymeSubstitute:
Dried Italian seasoning — Use 1/2 teaspoon dried Italian seasoning in place of 1/2 teaspoon dried thyme.
- 1/2 cup sour creamSubstitute:
Plain Greek yogurt — Use 1/2 cup plain Greek yogurt in place of 1/2 cup sour cream. Stir it in after cooking to help keep the texture smooth.

Place the boneless skinless chicken breast in the bottom of a 6-quart slow cooker.
Sprinkle the chicken evenly with the garlic powder, onion powder, black pepper, and dried thyme.
In a medium mixing bowl, whisk together the condensed cream of chicken soup, low-sodium chicken broth, and chicken gravy mix until mostly smooth.
Pour the gravy mixture evenly over the chicken.
Cover the slow cooker and cook on LOW for 3 1/2 to 4 hours, or until the chicken is tender and reaches an internal temperature of 165°F.
Transfer the cooked chicken to a cutting board or plate.
Shred the chicken using two forks or cut it into bite-size pieces.
Stir the sour cream into the gravy in the slow cooker until smooth and creamy.
Return the shredded chicken to the slow cooker and stir until thoroughly coated in the gravy.
Cover and cook for an additional 10 minutes on LOW, just until everything is heated through.
Taste the gravy and adjust the black pepper if desired.
Garnish with chopped fresh parsley, if using, and serve warm over mashed potatoes, rice, or egg noodles.
Recipe Notes
- Chicken breast cooks best when it is not left in the slow cooker significantly longer than needed, as overcooking can make it dry. Begin checking for doneness near the 3 1/2-hour mark. For a thicker gravy, leave the slow cooker uncovered for 10 to 15 minutes after shredding the chicken. The mashed potatoes, rice, or noodles used for serving are not included in the nutrition estimate.
