Place the cubed chicken breast in a bowl and sprinkle with the cornstarch. Toss until the chicken is lightly and evenly coated.
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken in a single layer and cook for 6 to 8 minutes, turning occasionally, until browned and cooked through to an internal temperature of 165°F. Transfer the chicken to a clean plate.
Add the broccoli florets and water to the same skillet. Cover and cook for 3 to 4 minutes, until the broccoli is bright green and crisp-tender.
While the broccoli cooks, whisk together the honey, low-sodium soy sauce, garlic, rice vinegar, toasted sesame oil, fresh ginger, and red pepper flakes in a small bowl.
Return the cooked chicken to the skillet with the broccoli.
Pour the honey garlic sauce over the chicken and broccoli. Stir well to coat.
Cook over medium heat for 2 to 3 minutes, stirring frequently, until the sauce thickens slightly and evenly coats the chicken and broccoli.
Divide the cooked jasmine rice among four bowls.
Spoon the honey garlic chicken and broccoli over the rice.
Garnish each bowl with sliced green onions and sesame seeds. Serve warm.
Recipe Notes
- Cut the chicken into evenly sized pieces so it cooks at the same rate. Avoid overcrowding the skillet when browning the chicken. For meal prep, divide the rice, chicken, and broccoli among airtight containers and refrigerate until ready to reheat.
