  • Large skillet
  • Large mixing bowl

Ingredients

  • 3 cups cooked white rice
    Substitute:

    Cooked brown rice — Use 3 cups cooked brown rice in place of 3 cups cooked white rice.

  • 3 cups cooked boneless skinless chicken breast, chopped or shredded
    Substitute:

    Cooked turkey breast — Use 3 cups chopped or shredded cooked turkey breast in place of the cooked chicken breast.

  • 3 cups broccoli florets, cut into bite-size pieces
    Substitute:

    Frozen broccoli florets — Use 3 cups thawed frozen broccoli florets in place of the fresh broccoli florets. Drain them thoroughly before adding them to the casserole.

  • 2 tablespoons unsalted butter
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup whole milk
    Substitute:

    2% milk — Use 1 cup 2% milk in place of 1 cup whole milk.

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 1/2 cups shredded sharp cheddar cheese, divided
    Substitute:

    Monterey Jack cheese — Use the same amount of shredded Monterey Jack cheese in place of the shredded sharp cheddar cheese.

  • 1/2 cup sour cream
    Substitute:

    Plain Greek yogurt — Use 1/2 cup plain Greek yogurt in place of 1/2 cup sour cream.

  • 1/3 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
    Substitute:

    Crushed buttery crackers — Use 1/2 cup crushed buttery crackers in place of 1/2 cup panko breadcrumbs.

  • 1 tablespoon melted butter

Instructions

  1. Preheat the oven to 375°F. Lightly grease a 9 x 13-inch baking dish.

  2. Bring a small pot of water to a boil. Add the broccoli florets and cook for 2 minutes, just until bright green and slightly tender. Drain well and set aside.

  3. Melt 2 tablespoons of unsalted butter in a large skillet over medium heat. Add the diced onion and cook for 4 to 5 minutes until softened.

  4. Add the minced garlic and cook for about 30 seconds, stirring constantly.

  5. Sprinkle the flour over the onion mixture and stir continuously for 1 minute.

  6. Slowly whisk in the chicken broth, followed by the milk. Add the garlic powder, onion powder, salt, black pepper, and dried thyme.

  7. Cook for 3 to 5 minutes, stirring frequently, until the sauce begins to thicken.

  8. Reduce the heat to low. Stir in 1 cup of the shredded cheddar cheese and the sour cream until smooth and creamy. Remove from the heat.

  9. Add the cooked white rice, cooked chicken breast, broccoli florets, and Parmesan cheese to a large mixing bowl. Pour the cheese sauce over the mixture and gently stir until everything is evenly coated.

  10. Transfer the mixture to the prepared baking dish and spread it evenly.

  11. Sprinkle the remaining 1/2 cup shredded cheddar cheese over the casserole.

  12. In a small bowl, combine the panko breadcrumbs with 1 tablespoon melted butter. Sprinkle the breadcrumb mixture evenly over the cheese.

  13. Bake uncovered for 25 to 30 minutes, until the casserole is hot and bubbling around the edges and the topping is lightly golden.

  14. Let the casserole rest for 5 minutes before serving.

Recipe Notes

  • Using already-cooked chicken and rice makes this casserole especially quick to assemble. Rotisserie chicken works well for convenience. Fresh broccoli gives the best texture, but frozen broccoli can also be used if it is thawed and drained thoroughly first. Avoid overcooking the broccoli before baking so it does not become mushy.
