Ingredients
- 2 cups cooked shredded boneless skinless chicken breastSubstitute:

- 4 ounces cream cheese, softenedSubstitute:
Neufchâtel cheese — Use 4 ounces softened Neufchâtel cheese in place of 4 ounces cream cheese for a slightly lighter filling.
- 1 cup shredded Monterey Jack cheeseSubstitute:
Shredded pepper Jack cheese — Use 1 cup shredded pepper Jack cheese in place of 1 cup shredded Monterey Jack cheese for a spicier filling.
- 1/2 cup salsaSubstitute:
Salsa verde — Use 1/2 cup salsa verde in place of 1/2 cup salsa for a tangier flavor.
- 2 green onions, thinly sliced
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder

- 8 medium flour tortillasSubstitute:
Corn tortillas — Use 8 corn tortillas in place of 8 flour tortillas. Warm the corn tortillas thoroughly before rolling because they are more likely to crack.
- Avocado oil cooking spraySubstitute:
Olive oil cooking spray — Use olive oil cooking spray in place of avocado oil cooking spray.

Preheat the air fryer to 375°F for 3 minutes.
Add the shredded chicken, softened cream cheese, Monterey Jack cheese, salsa, green onions, chili powder, cumin, garlic powder, and salt to a medium mixing bowl.
Stir until the chicken is evenly coated and the filling is well combined.
Warm the flour tortillas briefly until soft and flexible. This helps prevent them from cracking while rolling.
Place about 1/4 cup of the chicken mixture slightly below the center of each tortilla.
Roll each tortilla tightly around the filling to form a taquito.
Lightly spray the air fryer basket with avocado oil cooking spray.
Arrange the taquitos seam-side down in the air fryer basket in a single layer. Leave a little space between each taquito so the hot air can circulate. Cook in batches if necessary.
Lightly spray the tops of the taquitos with avocado oil cooking spray.
Air fry at 375°F for 5 minutes.
Turn the taquitos using tongs and cook for another 4 to 6 minutes, until the tortillas are crisp and golden brown and the filling is hot.
Allow the taquitos to cool for 2 to 3 minutes before serving. Serve with salsa, guacamole, sour cream, or your favorite dipping sauce if desired.
Recipe Notes
- Warming the tortillas before rolling makes them easier to work with and helps prevent cracking. Do not overfill the tortillas or the filling may escape during cooking. Air fryer sizes vary, so begin checking the taquitos near the end of the cooking time. For meal prep, prepare the filling ahead of time and refrigerate it until ready to assemble. Taquitos can also be assembled and frozen for later cooking.
