20-Minute Garlic Butter Shrimp Fried Rice
A quick skillet dinner made with juicy shrimp, chilled rice, scrambled eggs, peas, carrots, garlic, soy sauce, and toasted sesame oil. Cooking the shrimp separately keeps it tender, while cold cooked rice creates the separated grains and lightly toasted texture that make homemade fried rice especially satisfying.

Ingredients
- 1 pound large shrimp, peeled and deveinedSubstitute:
Diced cooked chicken — Add already-cooked chicken near the end and heat only until it reaches 165°F throughout.
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon neutral cooking oil
- 2 tablespoons unsalted butter, dividedSubstitute:
Neutral cooking oil — The dish will have less buttery richness but will still cook properly.
- 3 cloves garlic, minced
- 2 large eggs, lightly beaten
- 1 1/2 cups frozen peas and carrotsSubstitute:
Frozen mixed vegetables — Choose a blend with relatively small pieces so the vegetables heat through quickly.
- 4 cups cold cooked jasmine or long-grain white riceSubstitute:
Long-grain white rice — Chill the cooked rice thoroughly before frying for the best texture.

Gluten-free tamari — Use a product specifically labeled gluten-free if gluten avoidance is important.

- 3 scallions, thinly sliced

Pat the shrimp thoroughly dry with paper towels. Season evenly with the kosher salt and black pepper.
Heat a large skillet or wok over medium-high heat. Add the cooking oil and 1 tablespoon of the butter.
When the skillet is hot, add the shrimp in a single layer. Cook for 1 to 2 minutes on the first side.
Turn the shrimp and cook for another 1 to 2 minutes, until opaque and the thickest shrimp reach an internal temperature of 145°F.
Transfer the shrimp to a clean plate. Do not leave them in the skillet while preparing the remaining ingredients or they may become tough.
Add the remaining tablespoon of butter to the skillet.
Add the garlic and cook for about 20 seconds, stirring constantly.
Push the garlic to one side of the skillet. Pour the beaten eggs into the open area and scramble for 30 to 45 seconds until just set.
Add the frozen peas and carrots. Cook for 1 to 2 minutes until heated through.
Add the cold rice. Use a spatula to break apart any clumps and spread the rice across the hot surface of the skillet.
Cook for 2 to 3 minutes, tossing frequently, until the rice is hot and some of the grains begin to lightly toast.
Drizzle the soy sauce around the edges of the hot skillet, then add the sesame oil.
Toss thoroughly until the rice and vegetables are evenly seasoned.
Return the shrimp to the skillet and cook for about 1 minute, tossing gently, just until the shrimp are hot again.
Remove the skillet from the heat and fold in most of the sliced scallions.
Taste and add additional soy sauce only if needed.
Serve immediately with the remaining scallions and optional crushed red pepper flakes or sriracha.
Recipe Notes
Cold cooked rice produces much better fried rice than freshly cooked hot rice because it contains less surface moisture and is less likely to become sticky. If using freshly cooked rice, spread it in a thin layer on a sheet pan and refrigerate it until thoroughly chilled before making the recipe. Avoid overcrowding the shrimp during the initial sear. If your skillet is small, cook the shrimp in two batches. Reduced-sodium soy sauce gives you better control over the final salt level. This recipe is an excellent way to use leftover cooked rice and frozen vegetables. Cool leftovers promptly and refrigerate in an airtight container for up to 3 days. Reheat leftovers until they reach 165°F throughout.
