Chewy Brown Butter Chocolate Chip Cookies
Classic chocolate chip cookies made richer with deeply nutty brown butter, dark brown sugar, vanilla, and plenty of chocolate. Chilling the dough gives the flavors time to deepen and helps the cookies bake with golden edges and soft, chewy centers. A light sprinkle of flaky salt creates an optional bakery-style finish.

Ingredients
- 1 cup unsalted butterSubstitute:
Salted butter — Reduce the added kosher salt to approximately 1/4 teaspoon.
- 1 tablespoon cold water
- 1 cup packed dark brown sugarSubstitute:
Light brown sugar — The cookies will have a milder molasses flavor.
- 1/2 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon kosher salt
- 1 1/2 cups semisweet chocolate chips or chopped semisweet chocolateSubstitute:
Chopped dark chocolate — Dark chocolate produces larger pockets of melted chocolate and a slightly less sweet cookie.

Place the butter in a light-colored saucepan over medium heat.
Melt the butter completely, then continue cooking while stirring frequently. The butter will foam and the milk solids will begin settling toward the bottom of the pan.
Continue cooking until the milk solids become deep golden brown and the butter smells toasted and nutty. This generally takes 5 to 7 minutes after the butter has completely melted.
Immediately remove the saucepan from the heat so the browned milk solids do not burn.
Carefully pour the brown butter, including all of the browned milk solids, into a large heat-safe mixing bowl.
Stir in the tablespoon of cold water. This replaces some of the moisture that evaporated while the butter browned.
Let the butter cool for about 15 to 20 minutes. It can remain slightly warm but should no longer be hot.
Add the dark brown sugar and granulated sugar to the butter. Whisk until thoroughly combined.
Add the egg, egg yolk, and vanilla extract. Whisk vigorously for about 30 seconds until the mixture looks smooth and glossy.
In a separate bowl, whisk together the flour, baking soda, and kosher salt.
Add the dry ingredients to the butter mixture. Fold gently just until no obvious streaks of dry flour remain.
Fold in the chocolate chips or chopped chocolate.
Cover the dough and refrigerate for 30 minutes.
Preheat the oven to 350°F. Line two baking sheets with parchment paper.
Scoop the chilled dough into approximately 2-tablespoon portions and place them at least 2 inches apart on the prepared baking sheets.
Bake one sheet at a time for 10 to 12 minutes, until the edges are golden but the centers still appear slightly soft.
Remove the cookies from the oven and immediately sprinkle them with a very small amount of flaky salt if desired.
Let the cookies cool on the baking sheet for 5 minutes. They will continue setting as they cool.
Transfer the cookies to a wire rack and cool completely, or serve while still slightly warm.
Recipe Notes
A light-colored saucepan makes it much easier to judge the color of the milk solids while browning the butter. Once brown specks begin appearing, watch the butter carefully. It can change from properly browned to burned very quickly. Adding a tablespoon of water after browning replaces part of the moisture lost through evaporation and helps the cookies stay chewy. Do not overmix the dough after adding the flour. Chilling the dough reduces excessive spreading and develops deeper flavor. The centers should look slightly underdone when the cookies leave the oven. They will continue setting on the hot baking sheet. Store cooled cookies in an airtight container at room temperature for 3 to 4 days. Portioned cookie dough can be frozen on a baking sheet, transferred to a freezer bag, and stored for up to 3 months. Frozen dough can be baked directly from frozen. Add approximately 2 minutes to the baking time.
