Ingredients
- 2 cups old-fashioned rolled oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 2 large eggs
- 1 3/4 cups milkSubstitute:

Preheat the oven to 350°F. Lightly grease an 8-inch or 9-inch square baking dish.
In a large mixing bowl, stir together the rolled oats, baking powder, cinnamon, and salt.
In a separate bowl, whisk the eggs until completely blended.
Add the milk, maple syrup, melted butter, vanilla extract, lemon zest, and lemon juice to the eggs. Whisk until evenly combined.
Pour the wet ingredients into the oat mixture and stir until all of the oats are evenly moistened.
Gently fold in 1 cup of the blueberries.
Pour the oatmeal mixture into the prepared baking dish and spread it into an even layer.
Scatter the remaining 1/2 cup blueberries evenly over the top.
Bake for 35 to 40 minutes, until the center is set, the edges are lightly golden, and no loose liquid is visible when the baking dish is gently moved.
Remove the baked oatmeal from the oven and let it rest for at least 10 minutes. The texture will become firmer as it cools.
Cut into 8 portions.
Serve warm on its own or top each serving with Greek yogurt and additional berries if desired.
Recipe Notes
Use old-fashioned rolled oats rather than quick oats for the best texture. Frozen blueberries can be added directly from the freezer without thawing. The oatmeal may need an additional 3 to 5 minutes in the oven. The center should remain moist and tender but should not look wet or liquid when finished. Allowing the oatmeal to rest before slicing helps it hold together cleanly. For meal prep, cool the oatmeal completely before cutting and refrigerating. Store refrigerated portions in an airtight container for up to 5 days. For a softer texture when reheating, add 1 to 2 tablespoons of milk before microwaving. Individual portions can be wrapped and frozen for up to 2 months. Thaw overnight in the refrigerator or reheat gently from frozen.
